Gluten-free baking

When did you start?
I have been eating and baking gluten free since 2015. I started this lifestyle after I began to experience migraines. Removing gluten from my diet helped tremendously.

How long did it take you to get the hang of it?
I was pretty discouraged at first. Some things take longer to bake and sometimes the texture is just not right. It took a lot of practice and patience.

What is your favorite thing to make?
I never get tired of making is gluten-free banana bread with chocolate chips!

How often do you find time to bake?
I try to bake at least once a week.

What do you enjoy most about it?
There is nothing I love more than someone eating something I’ve made and telling me how good it is.

How did you hear about the job at WIN Energy?
I actually applied for another job at the co-op and was told about this opening and applied right away.

What were you doing before you joined the co-op?
I was working in the newsroom at a local TV and radio station. I wrote news stories, interviewed members of the community and was on the TV and radio.

What do you like about working at the co-op?
I love helping people, and my position lets me do just that. I am a member of the co-op myself, so it makes me proud of what we stand for.

Education:
Bachelor’s degree, marketing, Saint Mary-of-the-Woods College, West Terre Haute, Indiana.

What else do you like doing in your free time?
I enjoy spending time with my family and our pets. I also enjoy traveling, four-wheeler rides and shopping.

One random fact about you:
I am double-jointed in my arms and legs.
